1. Ensuring optimum value in terms of cost quality in respect of all F & B purchase rate contracts.
2. Establish potential food cost for each outlet and update the same every month.
3. Take monthly inventories of food and beverage assisted by another member of the controller staff, report excess/shortages.
4. Maintain daily records of cost, potential sales and actual for each outlet bar, investigate any significant variances.
5. Establishing a healthy F&B cycle processes, from the warehouses of the suppliers to the plates of the customers.
6. Lead negotiations with suppliers with regards to purchases/returns, prices, specifications, payment terms and other key terms and conditions.
7. Setting F&B cost deduction objectives with General Manager.
8. Check and ensure all menu items have a recipe.
9. Print and distribute menu sales analysis of the respective department on a monthly basis
1- تحديد التكلفة المباشرة و الغير مباشرة لكل منتج يتم بيعه في المطاعم الخاصة بنا في كل الفروع.
2- تحديد تكلفة الكمية و المكونات لكل منتج.
3- القدرة على تسعير المنتج - سياسة التسعير.
4- الرقابة على المخزون و تحديد حد أمان للمخزون.
5- متابعة قيمة الرواتب و تأثيرها على الربحية بالنسبة للمؤسسة.
6- مراقبة التكاليف المعيارية و مراقبة المكونات و مقارنتها بالتكلفة الفعلية و تحديد معدلات و أسباب الإنحراف إن وجدت.
